Tutu’s Roasted Veggies Salad

roasted veggiesIngredients:

2 small sweet onions, peeled and chopped
2 Japanese eggplants cut into 2 inch pieces
2 carrots cut into 2 inch pieces
1 red bell pepper, 1 green bell pepper cut julienne
1 lb Brussel spouts cut in half
2 Portobello mushrooms cut in 2 inch pieces
1/3 cup macadamia nut oil (or olive or avocado oil)
2 tbsp. Ginger & Basil Seasoning
Preheat oven to 375 degrees. Place vegetables in a large bowl, add oil, mix well. Add Ginger & Basil Seasoning, mix well. Place in large pan and roast for 30 minutes or until veggies are tender. Serve it warm or cold. Enjoy!
