Ingredients:

  • 2 ½ – 3 pounds boneless pork shoulder, cut into 3 – 4 large pieces
  • 8 – 10 cloves garlic, sliced in half lengthwise
  • 2 tablespoons olive oil
  • 1 large banana leaf, thawed if frozen and cut into 3 smaller pieces (see Recipe Notes)
  • 2 tablespoons Hawaiian sea salt or rub
  • 1 ½ tablespoons liquid smoke, divided
  • 2 cups water or chicken stock

Instructions:

  • Preheat your oven to 325°F (160°C).
  • Using a sharp knife, cut deep slits into the pork shoulder and insert the garlic slices into each pocket to flavor the meat from the inside out.
  • Heat olive oil in a heavy-bottomed dutch oven over medium-high heat. Sear the pork for 4-5 minutes per side until nicely browned, then set aside.
  • Wrap the seared pork in banana leaves, seasoning each layer with our Hawaiian sea salt and rubs and then a splash of liquid smoke.
  • Place the wrapped pork back into the Dutch oven, pour water or stock around the edges, cover securely, and braise in the oven for 2.5 to 3 hours until completely tender.

  • Heat oil in a pan to 350°F and fry the chicken for about 5 minutes per side until golden brown and crispy.
  • Whisk together the katsu sauce ingredients in a small bowl until smooth.
